Descaling and Water: The Maintenance That Decides How Long a Machine Lasts

Almost every home espresso machine that dies young dies of limescale, and almost every machine that starts tasting bad is dirty rather than broken. Descaling and cleaning are different jobs on different schedules, and the water you put in decides how often you do either.

Home coffee machines rarely break. They silt up.

The pattern is consistent enough to be predictable: a machine gets slower, the coffee stops being quite hot enough, the pump sounds like it is working harder, the steam loses pressure. Nobody notices any of it happening because each week is barely different from the last. Then it stops, and the repair costs more than the machine.

That is limescale, and it is the leading cause of death for home espresso machines. It is also entirely preventable with a bottle of acid and about twenty minutes every couple of months.

Two different jobs

The word “cleaning” gets used for both of these and they are unrelated procedures on different parts of the machine.

Descaling dissolves mineral deposits from the water path — tank, pump, boiler, valves, pipework. It uses an acid. Nothing in the water path ever touches coffee.

Cleaning removes coffee oil from the parts the coffee actually passes through — the group head and shower screen on an espresso machine, the basket and spray head on a drip brewer, the piercing needle on a pod machine. It uses an alkaline detergent.

Doing one does nothing for the other. A machine can be entirely free of scale and still make bitter, stale coffee, because rancid coffee oil is the more common cause of a machine that has started tasting bad. A machine can be spotless where the coffee goes and be quietly dying inside.

Most people do neither. Of those who do one, most do the descaling, because that is the one with a warning light.

What is actually happening in there

Tap water carries dissolved calcium and magnesium. Heat it, and those minerals come out of solution and deposit on the hottest surfaces — which in a coffee machine means the boiler wall and the heating element.

The deposit is an insulator. So the first symptom is thermal: the machine takes longer to reach temperature, and the temperature it holds becomes less accurate. On an espresso machine this shows up as shots that taste inconsistent for no reason you can identify, which people almost always blame on the grind or the dose first.

Then it becomes mechanical. Scale narrows the internal pipework, so flow slows and the pump works harder against the restriction. Solenoid valves stop seating properly. Eventually something seizes.

None of this is sudden, which is exactly why it goes unnoticed.

How often

Hardness and volume both matter, and volume is the part people forget — a machine pulling six shots a day passes several times as much water through its boiler as one pulling two.

  • Hard water (above ~200 ppm) — every one to two months.
  • Moderate (100–200 ppm) — every two to three months.
  • Soft (below ~100 ppm) — every three to six months.

Your water supplier publishes hardness by postcode, and a cheap TDS meter reads it in seconds. Find the number once; every decision below follows from it.

The descale light on your machine is almost certainly counting brew cycles rather than measuring anything. It is a reminder, not a diagnosis, and it does not know what your water is like. If flow has slowed, the pump has got louder, or the steam wand has lost pressure, you are past due regardless of what the light says.

Choosing a descaler

There are two chemistries in common use and the choice is not a matter of preference.

Citric acid is slower and safe across aluminium, brass, stainless steel and the plastics used throughout home machines. Urnex Dezcal is the one most manufacturers name, and it is the sensible default whenever you are not certain what your machine is made of.

Sulphamic acid is considerably faster and is explicitly unsafe for aluminium — which appears in plenty of boilers and thermoblocks, including in machines whose manuals do not make that obvious. It is the right tool for a badly scaled machine you are confident has no aluminium in the water path.

Two further points worth knowing. Liquid beats powder, because undissolved granules drawn into a pump are a real failure mode and a liquid rinses out in fewer cycles. And compare cost per treatment rather than cost per bottle — single-dose sachets are usually the same chemistry as a litre of concentrate at several times the price per descale.

Vinegar works on a cheap drip machine and is a poor idea anywhere else: weak, slow, no corrosion inhibitors, and a smell that survives an embarrassing number of flush cycles.

The procedure

Machines differ and the manual wins, but the shape of it is always the same.

  1. Empty everything. Water tank rinsed, drip tray emptied, portafilter or pod holder removed. Take out any in-tank water filter cartridge — descaler will exhaust it in one pass.
  2. Mix to the stated dilution and fill the tank. Getting this wrong in either direction is the most common user error; too weak does nothing, too strong is hard on seals.
  3. Run roughly half of it through the brew path, in stages rather than in one go, pausing to let it sit in the boiler. Contact time is what does the work.
  4. Run some through the steam wand and the hot water tap if the machine has them, because they are part of the same water path and are usually skipped.
  5. Let it stand for the time the descaler specifies. Longer is not better with the faster chemistries.
  6. Flush with at least two full tanks of fresh water, three if you have any doubt, through every route including steam. If what comes out still smells of anything, keep going.
  7. Refit the filter cartridge — a new one — and discard the first brew.

The step people skip is the fourth, and it is why a machine that has been descaled repeatedly can still lose steam pressure.

Cleaning is the other half

Descaler does nothing to coffee oil. Oil accumulates in the group head, goes rancid, and produces exactly the bitter, flat, stale flavour that gets blamed on old beans.

On a machine with a three-way valve, that means backflushing with a blind basket and an alkaline detergent such as Cafiza — weekly if you use the machine daily. On machines without a three-way valve, backflushing is not possible and you clean the shower screen and basket by hand and soak the portafilter.

On a drip brewer, it is the basket, the shower head and the carafe. On a pod machine, it is the piercing needle and the capsule holder, both of which clog with dried coffee.

And if you steam milk, rinse the wand and purge it immediately every single time. Water: the upstream fix

Everything above is a response to what you put in the tank. Changing the input changes the frequency.

Carbon filters — a jug filter or an in-tank cartridge — remove chlorine and improve taste immediately. They do very little about hardness, so they will not meaningfully change your descaling interval. Buy one for the flavour, not for the machine.

Ion exchange and reverse osmosis genuinely remove the minerals that form scale, and in a hard-water area a filter such as ZeroWater can stretch descaling from quarterly to annual. The catch is that they work too well: coffee needs minerals to carry the extraction, and water near zero TDS makes flat, hollow cups. Some machines also measure water level by conductivity and will not register it at all.

The target is roughly 75 to 150 ppm, not zero. If you filter aggressively, either cut the filtered water with some tap water or add minerals back with a supplement. That is a two-product routine and it is the last variable worth controlling, not the first.

Whatever you settle on, keep descaling. No filtration is perfect, and the cost of being wrong is the machine.

What this is worth

A bottle of descaler costs less than two bags of decent coffee and covers most of a year. Twenty minutes every couple of months keeps an espresso machine brewing at the temperature it was built to hold, and is the single cheapest thing you can do to extend its life.

It is also the least interesting purchase on this site, which is precisely why it does not get made. If you are weighing a maintenance routine against an upgrade, do the maintenance — a descaled machine with a decent grinder in front of it will beat a neglected better machine every time.

How often should I descale?

The failure is gradual rather than sudden, which is why people describe a scaled machine as having got tired rather than having broken.

Is descaling the same as cleaning?

No, and a machine needs both on separate schedules. Descaling uses acid to dissolve mineral deposits from the water path — tank, pump, boiler, pipework. Cleaning uses an alkaline detergent to remove coffee oil from the parts the coffee touches, which means backflushing the group head on an espresso machine and washing the basket and shower head on a drip brewer. Rancid coffee oil causes bitter, stale-tasting coffee far more often than scale does.

Can I use vinegar instead of a descaler?

You can on a cheap drip machine, but there are reasons the purpose-made products exist. Vinegar is a weak acid, so it needs long contact time, and the smell is stubbornly persistent — it takes many more flush cycles to clear than a proper descaler, and residue taints coffee for days. Commercial descalers also include corrosion inhibitors that protect seals and metal. On an espresso machine under warranty, use the product the manufacturer names.

Which descaler is safe for my machine?

Check whether there is aluminium anywhere in the water path, because sulphamic-acid descalers work fast and are explicitly unsafe for it — and aluminium boilers and thermoblocks are common. Citric-acid descalers are slower and safe across aluminium, brass, stainless and the plastics used in home machines, which makes citric the sensible default when you are unsure. Most manufacturers name an approved product in the manual, and using something else can matter if you make a warranty claim.

Does a water filter mean I can stop descaling?

No. A standard carbon filter removes chlorine and improves taste but barely touches the dissolved calcium and magnesium that form scale, so it changes the descaling schedule very little. Ion exchange or reverse osmosis do remove hardness and will genuinely stretch the interval, sometimes from quarterly to annually — but even then, descale periodically. No filtration is perfect and the cost of being wrong is the machine.

What water should I actually use?

Filtered tap water at moderate hardness, in the region of 75 to 150 ppm total dissolved solids. Minerals carry flavour out of the coffee, so distilled or heavily filtered water makes flat, hollow cups and can stop conductivity-based water level sensors working. Heavily mineralised water scales the machine and tastes dull. If your tap water tastes good to drink and is not notably hard, filtering out the chlorine is most of the job done.

How many flush cycles do I need after descaling?

At least two full tanks and preferably three, and on a machine with a steam wand run steam and hot water as well so the whole path is cleared rather than just the brew route. Descaler left in a boiler makes the next several drinks taste sour or metallic. If the water coming out still smells of anything, keep going. Liquid descalers generally rinse out in fewer cycles than powders.

Do I need to descale a pod machine?

Yes, and arguably more urgently, because pod machines use small thermoblocks with narrow water paths that block sooner than a large boiler does. Most of them have a descaling mode in the manual and a warning light that appears after a set number of cycles. The symptom of a scaled pod machine is a shot that dribbles rather than flows and coffee that is no longer properly hot.
